A Light Tangy & Spicy Veg Soup
Serves - 2
Ingredients
4 large tomatoes
a small bunch of corriander leaves
2 - 3 garlic cloves
a few cumin seeds
1 tsp asefoetida (hing) powder
1 tbsp oil
salt to taste
2 -3 dry red chillies
1/2 tbsp tamarind paste
a powder made of cumin seeds, black pepper corns & curry leaves (fresh leaves) - this can be stored
a pinch of turmeric powder
Method
- Chop the corriander leaves finely and crush with the garlic cloves. keep aside
- Blanch the tomatoes in water
- Remove skin and blend in the mixer
- To this add the tamarind paste diluted, two tsps of the prepared powder, a pinch of turmeric powder. mix and keep aside
- In a pan heat the oil and add the cumin seeds and asefoetida powder.
- Add the corriander & garlic crush. Allow to fry for about aminute. Do not let it burn
- Add about 500 ml of water to the tomato mix and mix well.
- Pour this into the pan over the corriander and mix well.
- Let this boil for a few minutes.
- Remove from flame and add salt as per taste.
You can have this with hot steamed rice or just as soup!
